2 x 1.3kg/3lb whole chickens

2 cups/500ml/17fl oz good-quality chicken stock

1 small preserved lemon, pulp discarded, rind rinsed and finely chopped

3 cloves garlic, thinly sliced

1¼ cups/150g/5½oz green olives, plus extra to serve

3 fresh bay leaves

2 tbsp olive oil

1 tsp sweet smoked paprika

CUMIN POTATOES

1kg/2lb 4oz all—purpose potatoes, unpeeled and cut into 2cm/¾in pieces

2 tbsp olive oil

2 tsp sea salt flakes

1 tsp ground cumin
